2 boneless skinless chicken breasts
2 c Italian Bread Crumbs
1 egg
1 c flour
1 slices provolone cheese

Flatten the Chicken
Here are some suggestions for a technique: put on an apron or an old shirt - there may be spatters. Pound it with a meat tenderizer (hammer type device), pound it with the edge of a plate, or put it between two pieces of saran srap and smack the hell out of it with a heavy pan. You want it to be about 1/4 inch thick.Make the bundles
Sprinkle the flattened chicken with bread crumbs. Cut the cheese slices in half and place them across the large end of your flattened chicken. Roll the chicken up so you have the cheese in the center.Bread the Chicken rolls
Beat the egg in a bowl. Cover half a paper plate with flour, the other half with bread crumbs. Heat a frying pan with some olive oil in it. Take a chicken roll and roll it in the flour to coat.Roll it in the egg to coat. Roll it in the bread crumbs toc oat, packing the bread crumbs around the chicken. Repeat with second roll.Cooking
Preheat your oven to 350 degrees. Place the rolls in the frying pan and gently brown the rolls. You'll probably have to do 3 'sides' to get it all browned.Line a baking pan with aluminum foil and place the chicken breasts on it. Bake at 350 for 20 minutes. Let them rest 5 minutes, then serve.
