Bleu Cheese Dressing

4 oz good Roquefort cheese, chopped
1 c mayonnaise
1 c heavy cream
2 tbsp tarragon vinegar (or 1 tbsp white vinegar)
1 tsp kosher salt
1/2 tsp freshly ground black pepper

Place all ingredients in food processor and process until smooth
