Pasta in Vodka Sauce
Liz McAllister
4 TBSP butter
2 thick slices cooked ham, diced
4 TBSP tomato paste (pasta sauce works too!)
1 TBSP fresh flat-leaf parsley, chopped
5 TBSP heavy cream
3 TBSP vodka
Salt
Pepper
Pasta
Start boiling your water for the pasta, I usually throw some olive oil and sea salt in the water to help keep the noodles from sticking together.
If you're using pasta sause you'll have to reduce it down into a paste. Just put it into your saucepan and turn the heat on medium-high and let reduce (if you have tomato paste, just start with that)
Next, melt the butter in the pan, add the ham, parsley, and season with salt and pepper. Let this cook, stirring occasionally, for about 10 minutes.
Stir in the cream and vodka and cook until the vodka has evaporated. You'll be able to tell by the amount of liquid that has evaporated. You're all set, just let cool and serve. Simple and tasty!
